Nice side dish at Thanksgiving:
2 c water
1 c quinoa
1/2 c toasted pine nuts
1 tsp salt
1 Tbsp fresh lemon juice
1 tsp paprika
1 tsp ground cumin
1/2 tsp ground coriander
2 Tbsp olive oil
1/4 cup dried apricots, chopped coarsely
1/2 c red onion minced
3 Tbsp dried sweet peppers (optional)
Cook quinoa (10 min) after 10 min
let sit for another 20 min
add toasted pine nuts
